Way to go Panthers!

I've really enjoyed watching the boys play soccer this year. The older they get, the more interesting the games get. Both boys have played well and have improved so much over the past 2 seasons. Carter's team has done exceptionally well this year. They finished first place in the fall and for the spring season they won the championship game for their age division (it was a great game... they won 1-0 in overtime!). They also received an award for the Underwood Cup Skills Championship in their age division.

Let's eat

I'm always searching for something to make life a little easier when it comes to supper time. The time period between 3 and 6pm is usually crazy for me...snack, homework, supper, entertaining the 3 year old, off to soccer practice, church or a game. I've tried frozen casseroles... problem with those is that I forget to take them out of the freezer to thaw. I've done plenty of drive-thru happy meals... I'm tired of fast food. I've meal planned and then forgot what I planned because I bought the groceries for it and then didn't write down the meals.

About 6 months ago I saw a morning TV show segment about a mom who meal plans for a year. A YEAR! It's hard for me to know what's going on 6 months from now. However, she talked about how it made life so much easier for their family of 6. She never had to question what was for supper when she came home from work and it cut their grocery bill in half. While planning her meals, she took into account nights they would eat out, when they were out of town or when to plan for leftovers. (It's very rare to have leftovers in my family of 5... but on occasion we do)

If someone can do it for a year, then surely I can do something on a smaller scale. So I started monthly meal planning. Yes, it takes commitment. I haven't stuck with it faithfully every month, but when I have it's made life so much easier. Take a couple hours one day or a little time over a few days to compile everything together... get your calendar, look through your recipes to find the meals you want to make, compile a grocery list, etc. You can use most any program or even hand write it, but I created mine in a Word document by downloading a monthly calendar. For each day, I plugged in a meal. On the days that I knew we would be getting home late, I planned for a make ahead meal*, leftovers, sandwiches or something quick. By planning this way, I am also able to make my grocery list and get everything I need to make the meals.

***Make ahead meals are ones that I can prepare before the kids get home from school. Most of the time these are crock pot meals or a casserole. For most casseroles, I will cook all of the ingredients and put it in the baking dish and have it ready to pop in the oven when it's time to eat. Sometimes I will go ahead and cook it and just warm it up when we get home.

Happy Mother's Day

I had a wonderful Mother's Day... church, out to lunch, a long nap, swimming with the family at the YMCA, picnic in the backyard, presents & great family time together. I am so thankful for my sweet children. They wanted to make yesterday so special for me & they did. They kept saying things like, "don't do _____, because it's mother's day". Cute. My hubby also pampered me with a gift certificate for a massage... ahhhhhh! He's good.

I love being a Mom & feel so privileged that God has give me this gift. I am thankful for my mom who has served as such a wonderful, Godly example for the past 34 years. I am also thankful to my mother-in-law who has accepted me into her family and loved me like one of her own. I love you both!

Crock Pot Roast recipe

I made a new recipe this weekend and it was just too good to not share with everyone (well, the few who read my blog).

1 roast (your choice of cut)
1 packet dry Italian dressing mix
1 packet dry Ranch Dressing mix
1 packet of brown gravy mix
3 cups water

Dump all ingredients & cook on low for 6-8 hrs or on high for 4-5 hrs. (*I mixed the brown gravy mix with 1 cup of the water before dumping into pot).

Princess Date Night

A couple weeks ago, on April 24, Kensley & her Daddy had their first date night. The YMCA hosted a Princess Date night for father's and daughters. Kensley was SO excited about going to a dance with her Daddy! She talked about it for weeks and told everyone we saw... anywhere. The day of the big event we picked out the dress she was going to wear. After all, it was a princess date night, so she had to dress the part. She first decided on Sleeping Beauty, but that dress is a little big, so she went as Snow White. I gave her a bath & fixed her hair. She picked out a necklace & bracelet to wear. And then they headed off... and before I could get a picture (grrr...)

They had such a good time. I sent the camera with Corby to take a few pictures since I wasn't able to go. Me & the boys had Mom/Son date night. We went to Chick-fil-A for supper and then to see Letters to God with another friend whose daughter & husband were at the dance as well.
From what I heard, Kensley boogied the whole night long. She took very few breaks and didn't give her Daddy much of a rest. She had a wonderful time and still is talking about it this week. Here are a few pictures.
